Jamie’s Apple and Honey Cake

Jamie brought this cake along to our honey cake tasting morning. It is adapted from a honey cake recipe of James Martin by adding a layer of caramelised apple slices on top. A winning combination. Too good just to make once a year.


Cake batter:

  • 170g clear honey
  • 140g unsalted butter
  • 85g muscovado sugar (I’d probably halve this when baking for the kids)
  • water
  • 2 eggs, beaten
  • 200g self raising flour, sifted


  • 2-3 apples, peeled, cored and sliced
  • 2 tbsp butter
  • 2 tbsp clear honey


  1. Preheat oven to Gas 3/ 180˚C, grease and line a 20inch cake tin
  2. Put honey, butter and sugar into a saucepan with 1 tbsp water and heat gently until melted, shaking pan gently occasionally to mix
  3. Remove from heat and add beaten egg and flour, whisk thoroughly until smooth
  4. Pour mix into cake tin and bake for 40-45 mins


  1. Heat butter and honey in a large frying pan until just melted
  2. Add apple slices and toss to coat in the syrup (Add more butter & honey if required to make sure everything is coated well)
  3. Fry gently until apple just starts to colour then remove from heat
  4. Gently place apple slices in a decorative pattern on the top of the cake whilst still warm. If there’s any syrup left in the pan pour this over the top.
