This is a quick sustaining cake to make for a busy Mummy. My four children loved it. Starting with my elder daughter Caroline I would bake one at the start of each University term and put it in a special tin for them to share with their friends
Ingredients 3 eggs 175 gms caster sugar 175 gms Tomor Sunflower margarine 275 gms flour 350 gms mixed dried fruit 90 gms glacé cherries 2 tablespoons marmalade
Method Mix all the above in a bowl or Kenwood mixer. Bake in a lined 7″ cake tin for 2 hours at gas mark 3 or 160 electric.
Keep cake in a tin for one week before using. Keeps well if students do not eat it all up immediately.
